PAPAYA SALAD

Delicious papaya salad! Super healthy and so good for you. Great for these hot days of summer.


Ingredients

2 cups of diced papaya

1/2 cup of chopped kale

5 chopped pitted dates

1 cup of shredded purple cabbage

3 limes (only the juice)

1/4 cup of olive oil

1/4 cup chopped walnuts


Instructions

Mix all the ingredients. Let the salad rest for about 15 minutes before eating, so the kale and the cabbage marinate in the lime and olive oil.
